Mediterranean Ground Beef Skillet

Ingredients
- (1 lb) Ground Beef
- (1/2) Red Bell Pepper, seeds removed, diced
- (1/2) Small Red Onion, diced
- (4) Cloves Garlic, minced
- (4 tablespoons) Olive Oil, divided
- (1/2) Yellow Bell Pepper, seeds removed, diced
- (1) Small Zucchini, diced
- (1 teaspoon) Oregano
- (1 teaspoon) Coriander
- (1/2 teaspoon) Cinnamon
- (1 teaspoon) Ground Cumin
- (1/2 teaspoon) Allspice
- (1/2 teaspoon) Clove
- (1/4 teaspoon) Crushed Red Pepper, optional
- (1/4 teaspoon) Cayenne Red Pepper, optional
- Green Onions, Green and White Parts Chopped, garnish
- (1/2 cup) Feta Cheese, crumbled, garnish
- (1/2 cup) Fresh Parsley, chopped, garnish
Directions
Step 1: Saute the Onion & Garlic
Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Add the garlic and red onion and saute for 2-3 minutes.
Step 2: Add The Vegetables
Add the red bell pepper, add the yellow bell pepper and zucchini and saute for 4-5 minutes or until the vegetables begin to become tender. Add the spinach in and saute until wilted.
Remove the vegetables into a large bowl and set aside.
Step 3: Saute the Ground Beef & Spices
Add another 2 tablespoons of olive oil to the skillet. Add the ground beef, oregano, coriander, cinnamon, cumin, allspice, cloves, crushed red pepper, cayenne pepper, and salt & pepper. Saute for 7-9 minutes or until beef is fully cooked. Drain the fat from the ground beef.
Return the ground beef to the skillet along with the vegetables.
Step 4: Finish & Garnish the Dish
Remove from heat and garnish with green onion, parsley and feta cheese. Serve over basmati or jasmine rice.
