Bell Pepper Nachos in the Air Fryer
This bell pepper nachos recipe swaps tortilla chips for crisp mini bell peppers, loaded with seasoned ground meat, melted cheese, and your favorite toppings. It’s a lighter, low-carb take on classic nachos—perfect for a healthy appetizer or easy weeknight dinner

Ingredients

  • (1 lb) Ground Beef
  • (1/2) Onion
  • mini bell peppers
  • (2 cloves) garlic
  • (2 cloves) garlic, minced
  • (2 cloves) garlic, minced
  • (1 tsp) Red Chile powder
  • (1 tsp) cumin
  • (1/2 tsp) paprika
  • (1/2 tsp) garlic salt
  • (1/2 tsp) onion powder
  • (1/4 tsp) oregano
  • (to taste) salt and pepper
  • (1 cup) shredded cheddar or Mexican blend cheese

Directions

  1. Cook the Ground Beef:

    • In a pan, sauté the ground beef with onion until the meat is browned through. Season to taste with your preferred seasonings.
  2. Prepare the Mini Bell Peppers:

    • Preheat your air fryer to 375 degrees.
    • Slice the tops off the mini bell peppers and cut them in half.
    • Lightly spray the air fryer basket with PAM or olive oil spray.
    • Spoon the cooked hamburger meat into each half of the bell pepper, then top with shredded cheese.
  3. Air Fry the Stuffed Peppers:

    • Place the stuffed peppers in the air fryer basket.
    • Cook for approximately 10 minutes, keeping an eye on the cheese to prevent burning.
  4. Make the Guacamole:

    • In a bowl, mash the avocados and mix in lime juice, garlic salt, and onion powder to taste.
  5. Prepare the Dipping Sauce:

    • Combine hot salsa with Greek yogurt or sour cream to create a creamy dip.
  6. Serve:

    • Once the stuffed peppers are done, top them with guacamole and serve along with the salsa mixture for dipping.
