Grilled Steak Gorgonzola Salad

Ingredients

Marinade for Sirloin Steak

  • 1 Tbsp Worcestershire sauce

  • 1/2 cup olive oil

  • 1/2 tsp Dijon mustard

  • 1/4 tsp garlic powder

  • Salt and pepper to taste

Salad

  • Cherry tomatoes

  • Red onion

  • Gorgonzola cheese, crumbled (blue cheese can be used as an alternative)

  • Lettuce of your choice (spinach is recommended)

  • Garlic (fresh or minced)

  • Garlic powder

  • Black beans (or grilled corn, if preferred)

Balsamic Vinaigrette

  • 3 Tbsp balsamic vinegar

  • 1/2 cup extra virgin olive oil

  • 1 tsp Dijon mustard

  • Dash of salt and pepper

Instructions

  1. Marinate the Steak: Ideally, marinate the steak for 3-4 hours. In a small bowl, mix the marinade ingredients. Place the steak in a gallon zip-lock bag and add the marinade. Seal and shake to coat.

  2. Prepare the Balsamic Vinaigrette: While the steak marinates, mix the balsamic vinaigrette ingredients in a separate bowl.

  3. Grill the Steak: After the steak has marinated for at least 30 minutes, start the grill. Grill the steak for 4 minutes on each side for medium rare.

  4. Rest and Assemble: Once cooked, place the steak on a plate to rest. Meanwhile, assemble your salad, topping it with sliced steak, Gorgonzola cheese, and vinaigrette.

  5. Leftovers: If there are leftovers, they can be deliciously repurposed in a wrap for lunch the following day.
