Ground Beef Burrito bowl for quick dinners or meal prep!

Ingredients

  • 1 lb ground beef

  • 1 cup chopped bell pepper

  • 12 oz beans of your choice (black beans are recommended)

  • 1 pkg riced cauliflower (cooked)

Serving Suggestions

  • Serve with rice and top with shredded cheese, sour cream or Greek yogurt, and/or guacamole.

Seasonings

  • Salt

  • Pepper

  • Garlic powder

  • Onion powder

  • Red Chile Powder

  • Paprika

  • A sprinkle of oregano

Instructions

  1. Brown the ground beef in the Instant Pot, adding the seasonings to taste.

  2. Once the beef is browned, incorporate the chopped bell peppers and beans.

  3. Mix in the cooked riced cauliflower and stir until combined. Allow the flavors to meld.

  4. If needed, add a small amount of chicken broth or water to prevent burning, ensuring it remains a cohesive mixture rather than a soup.

  5. Adjust seasonings as desired before serving.
